Our food
At Pancho Villa, we pride ourselves on creating fresh, authentic
Mexican dishes with a modern twist. In Mexico, food preparation can take
all day, so to be a chef at Pancho Villa is no 'paseo in the parque'- our
chefs are in at the crack of dawn, mashing avocados for guacamole,
chopping chillies – we use over twelve different chillies in our dishes -
and squeezing loads of fresh Mexican limes for making Margaritas.
We love to cater for large parties, informal gatherings and also for
customers who want a quiet but interesting evening discovering Mexican
cuisine and discussing Mexican culture – after all Like Water for
Chocolate is a wonderful evocative Mexican book all about food, love,
passion - and revolutionaries!
We work very closely with our suppliers to ensure that we use the best
possible seasonal ingredients such as our beef which is sourced from the
finest herds in the Scottish Borders. The beef is hung for three weeks to
bring out the best flavour for our popular steak fajitas - marinated
strips of rump steak.
Mexican food is also very vegetarian friendly and we can offer a large
variety of imaginative vegetarian dishes such as flour tortillas filled
with spinach, potato and red peppers in a mild chilli and cream sauce,
topped with melted cheese.
